Twice Cooked Wings

This has become my favorite wing recipe on the Big Green Egg.

Ingredients

Prep

  • Set up your Big Green Egg for indirect cooking at 350 (ºF)

  • Generously cover wings in your favorite rub

The Cook

  • When your BGE is up to temp, place your wings evenly on the grates

  • Cook for 22-25 minutes, or until your chicken reaches an internal temp of 165 (ºF)

The Finish

  • Remove the cooked wings from the grill grates

  • Toss them in your favorite sauce

  • Switch your Big Green Egg from indirect heat to direct heat

    • It’s easiest to do this if you have a PSWoo

  • Your Egg is going to jump in temp to around 450 to 500 (ºF) and that is just fine

  • Grill the wings about 2 minutes per side or until desired crispiness
